I’m at it again with the Ninja blender. I shaved some ice — like for a snow cone, then added some fruit juice.

Perfect for a celebration or anytime!

While it is not the healthiest thing on the planet, my kids certainly love this dish. I take a can of pork and beans then “doctor” them up a bit. I add ketchup and brown sugar twin to them. Then, slice in some hot dogs. I have one daughter who loves to just eat out the hot dogs, so leftovers are cold bean sandwiches — yum! If you’ve never eaten a cold bean sandwich — give it a try!

Creamed Dried Beef

This is such a favorite at our house.

Make a microwave white sauce, cut up Buddig Beef, serve over toast or rice. I added some green beans and an apple slice to this quick meal.

Tatertot Casserole

This is a wonderful kid-friendly dish. My mom had made it for me as a child. When I made it for my kids, they said, “Where’s the corn?” It seems that the cook at their daycare facility put corn in the recipe. So, I morphed my recipe too (so they would eat it!).

Quick Casserole

Ingredients:
2 lbs ground beef – I usually use 1lb of 93%lean beef or use ground turkey
2 t dried onion (handful)
1 can cream of chicken soup – I don’t like mushrooms, but you could use cream of mushrooms
canned, frozen, or fresh corn

1/2 c grated cheese

1 large package of frozen tater tots

Preparation:

Mix ground meat, onion, soup, and corn.  Place in baking dish.  Sprinkle with cheese, top with tater tots.
Bake at 350 degrees for 1 hour. Freezes well.
